That depends on if you just want to play guitar then get GH3, if you want to play other instruments as well you get RB. It's as simple as that. Also take a look at the songlist for the games to find something that appeals to you.

u should prolly recalibrate ure system for the screen lag.

It is calibrated, it just appears laggy because the recorder places the sound a bit off-set.
