Beating Egg Whites
When you are beating egg whites, use room temperature eggs in order to get the most volume. You can use a handheld mixer or a stand mixer, but if you use a stand mixer, watch carefully because it's easy to overbeat. If you're using a handheld mixer with attachments, use the whisk attachment.
The first stage of beating egg whites is the foamy stage. When lightly beaten to this stage, the whites will look bubbly and foamy.
The next stage is the soft peak stage. When the egg whites are beaten to soft peak stage, the whites will mound, but no sharp tips will form.
When the recipe calls for egg whites that are beaten to the stiff peak stage, beat until sharp tips form when the beaters are lifted.
When egg whites are overbeaten, they look curdled and dry. There's no restoring overbeaten egg white, so you'll need to start again.

  • How long does it take to do manually?

  • How long should it take with an electric hand mixer to get to a very stiff peak as it calls for in my cinnamon bread recipe? (I do not have a whisk attachment, so I too will have to use a regular attachment. Just curious as to how long it takes, because i have tried this three times and i can't seem to get it right. I even got up to ten minutes and it still wasn't hard enough. I followed all the tips people give (room temp eggs etc) and it still didn't work. Any advice?

  • @Jibjub80 Ive read that its not good to whip egg whites when its humid because they wont reach the full peaks with all the water in the air. I have never tested this out myself so i couldnt give you a straight answer; but if you are making them inside and its cool and dry i see no reason not to. :)

  • @freedomhoney21134 Is it possible to beat egg whites on a rainy day if you want to bake something with whites in them?? Or will that make it impossible to do?

  • @Jibjub80 I dont have the whisk attachment either but i still beat egg whites with the regular beater and they come out perfect. :)

  • What if your mixer does NOT have the whisk attachment? Can you use the regular beaters, or should you use a manual whisk?
