Learn how to get a tender, fluffy flesh and crispy skin on your baked potato.

To bake potatoes, use baking potatoes that are about 8 to 10 ounces each.
Prick each potato in a few places with a fork to allow excess moisture to escape during baking. This will prevent the skins from cracking and make the insides fluffier.
Don't wrap the potatoes in aluminum foil because the skin will steam instead of becoming crunchy.
Rub each potato with kosher salt, if desired.
Place potatoes directly on the bottom rack of an oven that's been preheated to 400 degrees, and bake for 1 hour or until tender when pierced with a fork.
Before cutting into the potato, roll it several times with your hand to break the pulp apare. Then cut into the potato with a knife and squeeze the ends with your fingers to release the pulp and make it fluffy.

For faster results, prick the potatoes in several places, rub with salt if desired, and microwave at HIGH 3 minutes if you're baking one potato. Add an extra minute for additional potato.
Transfer to a 400-degree oven and bake 30 minutes or until the potato is crispy on the outside and soft on the inside.
