web made some pancakes for breakfast.

Fluffy Pancakes

1+1/2 C flour
1 T sugar
1 tsp baking powder
1/2 tsp baking soda

1/2 C soymilk or water
2T vegetable oil

Mix the dry ingredients and then stir the wet ingredientes. If the batter is too thick, add water a tablespoon at a time until desired consistency is reached.

Pour batter onto a nonstick pan and cook over medium heat, turning once when the edges begin to bubble and brown.

C : Cup
T : Tablespoon
tsp: teaspoon

I prefer to use soymilk, i never tried them with just water...but i have the feeling they taste better with soymilk.
If when you mix them all up and u cant make it a really smooth liquid(it happens alot with me) you can allways use a Blender/Liquidizer to make it really smooth.
Sometimes i add a lil lemon, just some drops, tastes good.

  • @DodgyRoller Hi there. Right now i just use all purpose flour (that kind that already has yeast included), soy mil and sugar. Sometimes i add coffee just for the flavor =P

    So a normal breakfast for me would be: 10 soup spoons of flour, 3 soup spoons of sugar, some coffee, half a coffee spoon of olive oil and i add soy milk until i get a liquid with the density of honey (more or less). I never considered the temperature when making them.

    They come out fluffy and really good =) 

  • I'm not vegan but I needed an egg free recipe for my son who is allergic to eggs - this looks like a good one :) I usually make thin pancakes/crepes; whenever I've tried to make fluffy pancakes they go too brown before its time to flip 'em. So I guess its best to cook them on a lower temperature ... what temperature do you do them at?

  • thanks for the recipe. I have been transitioning into a vegan diet and I tried to make pancakes this morning but no matter what I did, they just weren't as fluffy and light as they were when I used milk and eggs. I also use Whole Wheat Pancake mix so maybe that is part of the problem. Do you thing your recipe would work with whole wheat flour?
