At the Laugavegur trekking there are bridges over all large rivers - the river in the Laugavegur Part 3 video at 1:03 was the largest (there's another one at day 4 which has about the same amount of water)
Of course the water quantity depends on the weather.
The Laugavegur is a well marked tail and easy to walk at good weather conditions. For other trips you have to get more info and good maps.

I'm planning doing this hike in august this year -thank you for the insights - wonderful scenery - how did you find the river crossings?
