Tropical Delight [Dave's Birthday Cake]

Ingredients:
1can Crushed Pineapple
1box Yellow Cake Mix
1box Vanilla Instant Pudding
1tub Cool Whip
1/2c Shredded Coconut
----
Mix pudding as directed.
Drain pineapple and save the juice.
Mix cake mix as directed; but replace the water with the pineapple juice.
Bake cake as directed
Mix 1/4 cup of the prepared pudding with the cool whip and stir in all but a heaping spoon of the pineapple.
Mix the remaining spoon of pineapple with the pudding
chill pudding and cool whip mixture while the cake is baking
cool the cake for 10 minutes and after poking the top of the cake with a butter knife spread the pudding on top while the cake is still slightly warm.
Chill for another 10-15 minutes then top with the cool whip mixture.
Chill an hour and enjoy!!!

  • Its optional, but most people add 6oz cream cheese to the pudding mixture. It gives it a nice frosting like texture while all the while, the taste of the pudding remains.
