@IAMtheNewWorldOrder... you can get them a couple different ways, easiest is if you eat mean, just buy a whole chicken, prepare it for a meal (roasted, baked, slow-cooked, etc) and after the meat is eaten for the meal, use the remaining carcass for a stock. Second, you can purchase carcasses from a local butcher/grocery meat dept if they cut their own meat from whole chickens. Third, tell family and friends what you are doing and ask them if they mind saving carcasses for you in their freezers.

Where does one find a chicken carcass appropriate for use in a stock, if they don't keep live chickens themselves? In other words, can I find it at the grocery store? Is it really just bones?

I was wondering if you had information on how to reduce the chicken fat... I tried it, but as the fat heated in the pan, it turned VERY dark and began to fill my kitchen with smoke. Also, do you have examples of how the reduced fat can be used in recipes once the reduction process has been successfully completed??? Thank you so much :)
those that complain that this guy talks more than he cooks, how are you going to learn anything if you don't understand the reason behind what he does???
