We add a little flavor to the show by showing you how the old timers cured meat. Tim Farmer heads back to Bill Dixon's smokehouse in Harlan County. With pork on the butcher block, see tricks to salt-curing, sugar-curing and a technique using cold smoke.

  • how do you keep flies off?

  • Wonderful video thank you :)

But how do they keep the flies off the meat? I'm guessing that the smoking stage discourages them, but before that during the dry cure with salt/sugar they're lying there in the shed with huge gaps between the boards?

  • None of that hormone enjected meat poisoning your body with cancer. I hear that there is a law pending, if passed we would not be allowed to raise our own crops and meats. The big business wants all of us to depend on them.

  • You wanna live long, smoke your meat...This man is a living testament to that. Its a shame that majority of people these days have no idea and no desire to learn the true meaning (and benefits) of self sufficiency!

  • wow..what memories... not sure that cold processing is what they call it in the South, I can't remember..lol I was such a "youngin'... I just remember the lil' old smoke house. Cant remember a lot about the smoking process. I do remember cleaning a hog or two in my time. Wow, nothing like fresh homemade crackling or pork rinds fresh out of the old black pot out side.. Wish there were more details to the video. :D ty for sharing!

  • Luv the vid, I hope u guys are listening to people on here, we need more of this type of vid. Great to see the old ways, need to keep a record of it.

  • Yea, you don't need much, really old school things like a diesel tractor and an electric chainsaw. lol

  • I want to build a smoke house.

  • Loved it!!!!

  • I want to meet this Guy.
