@ChiefWiggim yeah we do it that way in Texas for Safeway however at Albertsons we did it more like in the video there are actually 3 ways to cut a sirloin that i know of ..don't work too hard guys
Those look like they came in user-friendly, Im used to seeing them with more bark on em. I learned how to cut meat when I bought a grocery store in case my meat manager needed a vacation. I enjoyed it, I learned the basics to cut boxed beef/pork/chicken. I cut sirloins in half to sell them easier. Less sticker shock at 5-6.99 lb
I'm from northern maine. Been cutting for only 4-5years now. I work for a shur fine store. I cut mine alittle different. I cut the fat cap off then seperate the sirloin tips off the top and make siloin tip staek and then cutt the rest to NY and a short cutt at the end. I cut mine with the cap side up. Its cool to see how each cutter cuts. I'm always looking for something new. My boss showed me to do it this way to make smaller NY steaks but to be you lose money by separating them,over $1.50lbs
