Scale out:
250g Gelatin Sheets
375g Water
325g Sugar (scaled out in a pot)
75g Glucose

1.) Add glucose to water and warm over low heat, stir until dissolved.
2.) Bloom gelatin in cold water (alternate the sheets so they bloom properly, do not stack in water all at once.)
3.) Once glucose and water are dissolved/combined, pour into pot with sugar and homogenize (until sugar is dissolved), a slight boil.
4.) Wring out bloomed gelatin of its excess water.
5.) Pour sugar mixture into gelatin and whisk till gelatin dissolves.
