  • Actually, I'm never sure what I might have touched so to keep germs off of the food, I always wear a pair, and keep more pairs nearby ... I absolutely hate to see a chef touch "somebody's" food!

  • @fredsmusicandbbq It is a proven fact that human hands cleaned with warm water and antibacterial soap are more sanitary than any type of glove.

  • forget the nitrates and nitrites, you dont need that, unless you want cancer

  • I cut the rind off before I cure, so the seasonings get into the meat. Cut the belly into pieces you can handle, I'd have cut this slap in half or thirds.

  • I like the fact that you are wearing latex gloves. So many of these how-to YouTube videos don't, and that's a GIANT NO NO. Kudos to you...
