I cut the rind off before I cure, so the seasonings get into the meat. Cut the belly into pieces you can handle, I'd have cut this slap in half or thirds.

Actually, I'm never sure what I might have touched so to keep germs off of the food, I always wear a pair, and keep more pairs nearby ... I absolutely hate to see a chef touch "somebody's" food!
