Magic is a plot hole-filler, I guess it's not supposed to make sense entirely. As long as it makes for a fun game, it works, right?

Good point, I always thought it was 'encased' not 'turn to'. And by turning into stone, that means all of your necessary vitals would as well.

Fo your question on Stone to Flesh: I suppose, realistically, being encased in stone would deplete your oxygen, therefore your health...
