If you haven't been on a cruise to Dominica, this lush paradise, in the British, not French, West Indies, should be on your to-do list. With Morne Trois Piton park on the list of UNESCO World Heritage Sites, 365 rivers, waterfalls, lush forests and dense canyons, Dominica (pronounced "dom-in-EEK-ah" is still unspoiled and untourist-y. Love to cook? If your ship offers the "Cooking Caribbean" tour, sign up immediately. It's the best, most fun and scenic cooking class I've ever tried.
