Ingredients
1 1/2 cups raw, shelled peanuts
1 cup sugar
1/2 cup light corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla extract
1 tsp baking soda
Directions
Generously butter a cookie sheet and set it aside.
In a 2 qt Pyrex or microwave safe dish, add raw shelled peanuts, sugar, light corn syrup and salt.
Stir together.
Microwave on high for about 5 minutes.
Remove dish from microwave and add butter and vanilla extract. (Be careful as dish will be very hot.)
Stir until well blended.
Microwave for an additional 2 minutes or so or until the mixture takes on a light brown brittle color.
When the mixture gets to the desired stage, remove from microwave and add baking soda.
Stir quickly. The mixture will become light and foamy.
Quickly pour mixture onto the buttered cookie sheet and spread it into a thin layer.
Let cool and then break into pieces to serve.
Store in an air-tight container.

OMG, I had all the ingredients and I made the brittle as soon as I saw the video. It was incredible. I put it in the freezer as soon as it was done so I could try it quickly and it was just as good as it looked on the video. I used a bit more vanilla and salt to my own taste and it was just great.

Your peanut brittle looks wonderful, Amy! I've never seen it made in the microwave before, so it's something new for me to try! My family loves peanut brittle, and Christmastime is perfect for splurging on sweets! I hope you are doing great, Amy!
