[11/21] Cooking Challenge Week - Sweet Potatoes & Yams

I kind of just winged it! But below is what I used:

1 yam
1 sweet potato
5 individual packets of Truvia
cinnamon
2 tsps vanilla extract
a bunch of sprays of I Can't Believe It's Not Butter Spray
candied almonds***

Chop yam and sweet potato. Mix in bowl with the rest of the ingredients. Spread in pan. Bake at 400 degrees for 30 minutes. Enjoy.

***Candied almonds***
Mix almonds, butter spray, Truvia and cinnamon. Spread on baking sheet. Bake in oven for 5-10 minutes. Enjoy.

  • @dazydrvr I can't get over how god the almonds turned out in this dish! They are sweet on the outside then literally BURST with nutty flavor in the mouth!!! You should definitely try it! :D

  • @7llazaren My thought to add the zero calorie sweetener is because when we usually make it, it is COVERED in brown sugar, marshallows, and butter....this is just a way to lessen that but still have the gooey-ness that I love. :D You can always make it without it if that is to your liking!

  • @mollybcutie2000 Hahaha - they are really similar, but they are different. I had the hubby try it and he said the almonds caused a weird texture between the two, so if you have a texture thing, I would highly recommend chopping. I really like eating the whole almond and having the flavor burst in my mouth. :D

  • @genuinelysarcastic Hahaha - yes, I am a first person shooter fan, but it is really a L4D fan. :D The truvia does not overtake the flavor of the yams, you really taste the roots, it just brings out the sweetness. Definitely try it!! :D
