I made this today and it was absolutely delicious. I used regular tomatoes instead of the can, I was afraid it would be watery, but it came out super divine! Thanks so much. And, you are so right. I usually buy shredded Kraft parmesan but the real stuff makes a huge difference.

You have to put "ricotta salata" ( salted ricotta) and not mozzarella in this dish. Cuz it's hard to find outside Italy I saw many people substitute it with the Greek feta cheese, try it if you wanna. :)

Laura, this looks really good! I should tell you though, if you're "getting away" from frying eggplant due to health concerns you should know the latest medical research shows foods fried in olive oil or sunflower oil are NOT bad for your heart! Google it and you'll see what I mean. Love your cooking show, by the way!
