Great video, very helpful for bread shaping. I've had difficulty creating tension in the dough for the final rise of batards and Hitz's techniques have overcome that issue. It does deflate (degas) somewhat the dough, but it rises again and forms beautiful Batards.

Instead of permanent marker you can just take your loaf and cut hardly noticeable lines down the length of the bread.

Great video. May i ask what the hydration of this dough is? Granted I'm an amateur but I struggle to tighten the dough enough to retain a batard shape-it spreads too much. I use 60% hydration when trying batard which is considered quite low? Still struggle though! I can prove in banneton but then the batard shape is lost..

Well, the elevator music was a nice touch. Surely, I can hear every word you said. I don't know what more does Grufian needs. But do we really think that Grufian would really make any bread? Heck no! Leave it to Grufian to nitpick at mindless nothings. Anyway, thanks for sharing on forming bread dough. I would definitely use your tips the next time I make bread.
