貝殻の黒っぽい(平べったい)側を下にして火にかけます。火に当たる側の貝柱が先に殻から外れます。貝柱が外れたら直ぐにひっくり返します。今度は膨らみのある(白っぽい­)側が下になります。これで煮汁がこぼれにくくなります。後はお酒・しょう油・バターなどで味付けします。貝から煮汁が出なくなったら焼き上がりです。
