When I set my altitude, and activate it, the plane can't hold it, instead it just pitches up and down around it within 1000 ft. Help?

Make sure you set the elevator trim before you engage the autopilot.

WOW- you put a lot of work into all this stuff. Ingenuity like yours lead to many amazing discoveries. I am so impressed by your work on this simulator. Im curious if new touch screen monitors would make all the buttons "press-able" of course twisting knobs like course, altitude or speed selection, zoom rings, would obviously not work. Is there a new flight sim since x?for some reason yours looks so much more real than mine. I haven't computer simm'ed in years

It may be that you need to set up "Trim" first. I think that's what it's called. I could be way off base though.

This is a good solution for people that don't want a commercial made panel. I for instance have a vrinsight M Panel, and I'm very satisfied with it, but this here does get the job done :-)
