One thing that might help the congregation sing better is, when you play the intro to the hymn, play hymn or response at the same tempo as the introduction. If you don't some people have trouble keeping up and it begins to drag when you slow down. Trust me, I used to make that mistake all the time, until my organ professor in college corrected me right away!

very well done my friend, i wish our parish would use the organ more often. they use guitars and the piano instead, and this is coming from a yougin too :)
