overly long, could have easily been made more compact by adding a couple elbows and nipples to the barrel to make the tank ride on top, side or bottom of the barrel, thus reducing it's OAL and thus, making it more compact.

This is by far the worst PVC welding technique I have ever seen here or in person, and I've seen a ton of these videos. Please, please, please, if you do not want flying plastic shrapnel, read the instructions carefully, and maybe even look at a book or good internet resource for the proper technique before building a pneumatic device out of PVC.

@babyque93 woops, read the post wrong. they can handle 200psi, but that is the pressure before it will blow.

Could you explain how the pneumatics work? What is the point of the 100 psi switch? Looks to me like its just to make sure you have 100 psi behind your potato before you let it go. Is there any way to regulate how much pressure actually goes through the barrel so you don't have to send all 100 psi through at one time.
Basically I'm not getting how air flows through this thing.

You are correct. The basic principle of this is the presure switch is restricting how much air goes into the system. I'm not sure if there is a variable switch, but you can regulate how much pressure is going through by getting a switch rated at a different pressure.

how do you know how much pressure the tank can hold. and were can i get a pneumatic trigger and how much i need to know

The chamber can hold up to 100psi safely. Theoretically it can go up to 120psi but there is the chance the chamber may explode at that pressure. Otherwise, don't go any higher.
For the Pressure Trigger, try searching on Google: McMaster. It is an online building catalog and may have the part you need.
