  • i have the same exact pressure cooker,. i highly recommend it,. i can pressure cook goat, also ox tails and it will come out falling off the bone tender within 18 to 30 minutes instead of hours of simmering!!

  • @bonzaibb12 Also have the butcher cut the bones into smaller pieces they contain more vitamins than anything you can buy off the shelf. Boil them for a few hours in a large stockpot with plenty of onions, carrots and celery and freeze you can let it simmer a longer period of time to concentrate it for easier freezer storage. If you do not like soup then do the same thing and give it to your dogs or your neighbors for doggy stew.

    1. Age the meat in a large walk in refrigerator on a hook 2-3 days

    2. Debone the meat when butchering instead of cutting through it

    3. Plan meals 1-2 days ahead and use a brine, soak, or marinade very small pineapple chunks, buttermilk, milk, Salt and spice brine Terryaki, Garlic and lemon, Cilantro with garlic and lime juice

    I am not a hunter but I cook with game meat often since it has grown on me and is healthier than store bought beef.
