    The box says to leave 1" of headspace, which in smaller jars is impractical, and in most recipes contradictory. Here it doesn't look like you left 1" of headspace--so we can ignore that bit?

    Also, I have had two seal failures several days (under two weeks) *after* the lids had been tested after canning. Is it possible that the nitrile ring can suffer from a slow leak and cause a failure that is not apparent as soon as 24h after canning?

    - the additional headspace is really not a critical issue, unless you are pressure canning greasy products like chicken broth or the like. In those instances it helps to have a little extra space to ensure there is no seepage of the fluid. It is not necessary in most cases, and you will be fine following the standard guidelines for the food you are processing.

    I suspect the failures are due to the metal screw bands being too tight to begin with, or not tightened afterward.

    I can see potential for the rings seating right being an issue. What I would have difficulty with is that there isn't that "magic button" spot that is a dead (pardon the wording) give away if something toxic crept. The satisfaction of hear those "pings" when the vacumm sucks down the lid would be sorely missed.

    I was curious and called my local Extension service to see whatthey knew about this.

    The answer came back that since the USDA does NOT approve use, the Extension service doesn't recommend, or imply any recommendation. Guess it is a USE AT YOUR OWN RISK? I don't want to go against USDA or Extension, but there are a lot of "users" out there that are incapable of following directions. What a surprize right? Who would have thought that people failed DIRECTIONS 101?
