Attention! My family did not die after I handled this chicken. I wiped everything down with antibacterial wipes. Please do not worry about my family or my welfare. We'll live ;)

I got this recipe years ago in some Martha Stewart magazine (Everyday Foods, perhaps?). I've been making this for years. Yummy stuff!

Yep, found the link here: http://www.marthastewart.com/338472/parmesan-stuffed-chicken-breasts 1 cup fresh flat-leaf parsley leaves, chopped 1/4 cup plain dried breadcrumbs 1/4 cup grated Parmesan cheese Grated zest of 1 lemon (about 1 tablespoon) Coarse salt and ground pepper 4 bone-in chicken breast halves (about 3 pounds)

Directions Preheat oven to 450 degrees. In a small bowl, mix parsley, breadcrumbs, Parmesan, and zest. Season with 1/4 teaspoon each salt and pepper. Divide parsley mixture into four mounds. Carefully loosen chicken skin with fingers; tuck parsley mixture under skin. Season chicken with salt and pepper. Place in a 9-by-13-inch roasting pan. Bake until skin is crispy, chicken is cooked through, and an instant-read thermometer inserted in the thickest part of the meat registers 165 degrees, about 30 minutes.

    Yep, I always modify the recipes to fit our family. So if I say four and put in 8, I'm doubling it up but still just quoting the recipe.

    I am hoping that YT is going to fix that glitch. I'm sort of tired of it already

  • that looks so good!...when i cook...i just cook....i'm 45 and have yet to be sick from my cooking methods...our ancestors killed their "chicken"...butchered it and ate it the same night...they walked on dirt floor and washed their dishes in well water heated on stoves for cryin out load...too many paranoid people in this world...and to each his own...you're just providing a recipe...they can take whatever steps they choose in preparation...cute dress btw ;-)

  • @renee7aw HALLELUJAH!! I think a lot of these young whippersnappers who watch the Food Channel and pick and choose the information which they choose to hold on to are the worst of the lot. I've been cooking long enough to know I just don't WANT chicken juice all over everything I own. Who the hell would? lol

  • I've started saving the zest from lemons in zip lock bags. As expensive as lemons are here, I waste nothing. I did find that the latin store a couple blocks away has small lemons for 3-$1. Nice to meet the "girls"!!! lol

  • @Joan3424 I always forgetyou can hear them in the background. I am so used to hearing them that I don't hear them, if that makes sense
