It's not that the stars of today turned into pussies, it's that the officiating has changed a lot. Watch footage of an 80s or 90s game and people are tripping and holding and hooking every chance they got. Don't blame the players, blame Bettman for trying to make hockey more exciting offensively. And what else could he do? He had to find someway to bring people to watch after the lockout.
