oops...I forgot the most important part....In Step #1, after you poke holes in the Whole-Boiled Potatoes, you have to DEEP FRY those potatoes. These deep-fried boiled potatoes must be dark brown. Then continue with Step 2.......

I can give u our Kashmiri Brahmin recipe for Dum Oluv
1) Boil potatoes; peel; poke holes (keep potatoes whole and do NOT cut them)
2) Heat oil- add Red Chilli Powder, 2 tbsp of yogurt, tsp of ginger powder; tsp of fennel powder; tsp of Asafoetida
3) add water to the above oil (with spices) and add the whole-boiled potatoes (that have been poked)
4) While boiling, add tsp of Cinnamon powder, tsp of crushed Black and Green Cardammom
5) Dish shud be Red in colour with very LITTLE gravy

Also, you could have added "Ratan Jot"- which we Kashmiri Brahmins use in place of Tomatoes in our version of the Rogan Josh.

Yes, and it does make a difference in taste. I would also add a little bit more Cardammom to this Rogan Josh (both Green and Black Cardammom).

i want a recipe of Dum alloo...i luv the way kashmiris cook it...nothing can beat it..Pls upload the Dum allo recipe as soon as possible...i saw many dum alloo recipes but they r very different ....i guess only kashmiris can cook best Dum aloo..Thanks alot..

Well this si the kashmiri PANDIT way of cooking Rogan josh, which is slightly different form the kashmiri Muslim Rogan Josh (they do add onions and garlic, while we pandits do NOT add it to our version of Rogan josh).

This is the authentic Kashur style of Rogan Josh. Most of the Non-Kashmiris don't know how to make it in the authentic style. Thank you so much for posting in our Kashur way.....
good.....why dont u send ur dish to some cookery show??m sure they will add it in their prog..........actually why dont u start ur own cookery show for kashmiris??it will b a nice effort to spread our cultural dishes worldwide.....
