Daniel and Justin from the Yale Sustainable Food Project provided me with fresh horse radish. It's a hardy plant that does well in the North East. I had been thinking about using it in lieu of wasabi. Justin and I experimented with some recipes and came up with one that is as good as the best fresh wasabi that I have ever had. I find that the horse radish tastes the best when placed directly on top of the sushi about to be eaten. By summer of 2012 Miya's will be using only our own recipe of locally grown horse radish!
