To defeather the chicken, we first dunk the bird in water around 140 degrees for about 30 seconds depending on the size of the bird. If the feathers are tough to pull out you know you have to dunk longer and if the skin rips you did it a little too long, then you can either pluck the feathers by hand or you can make a plucker as we did, which worked great.
