Instead of lard. I get cow bones from the butcher. (Usually shinbones) and anyother bits and pieces of meat and bone i can get really cheap . Season them and roast them in the oven. i then add water and strain to make a stock. i let the stock cool and separate the fat from the liquor and use the fat to baste my roast. Best thing is once the roast is cooked you can add the liquor from the bones to the drippings from the roast to make a great gravy
