Once the crab molts and leaves it's "skin" or shell, the shell is discarded. I guess you could eat it if you really wanted to, but I don't imagine it would taste good. The crab will eventually die, just like every other living thing. This is just how they grow. They have to shed the old hard shell because they get too big for it, and then make a new shell.
