Chose this recipe for my hispanic heritage.
Piña Colada is a Spanish drink. LOL

Ingredients:
Can of sliced pineapple
Coco Goya cream of coconut
Pineapple cake mix
Coconut frosting
Coconut flakes

Line bottom of pan with pineapple slices.
Mix cake according to directions but substitute the cream and juice for the oil and water.
Bake according to directions but it may take longer to bake according to how you mix it.
Stick fork to make sure its cooked and let cool completely.
Frost and add flakes.

Add any garnish you like or none at all

Other variations:
Omit the frosting but add the flakes inside the mix.
Instead of pineapple slices you can add crushed pineapple to the mix
You can pour rum on the cake once its cooled by poking holes in it.
Or add rum to the mix
You can use coconut pudding in the mix.
You can use whip cream iinstead of frosting.

  • all4one1fourall, I don't have just one sweet tooth, all mine are in that condition. LOL I'm sure I'll love it! Thank you for sharing!

  • @neelie3 I dont remember the can sizes but they are pretty standard sizes and I used the entire can of cocoa and the juice from the can of pineapples but if you feel safer just use the cake directions and substitute the oil and water for coco cream and pineapple juice.

  • I wish you would have given the amounts of coconut cream and pineapple juice to use. I would hate to guess wrong and have it turn out bad!
