@Sugarfix1980 You rinse the outside with running water and use a damp towel (you may dab a little white vinegar on the cloth for extra cleaning precautions) to wipe the gills clean.

This seems to imply you don't wash the underside?? I'm wondering, because if you do, it's hard to dry it there, and you end up with a lot of water in the dish you're preparing. Any comment?
