i think microsoft will create something cool, and then apple will find a way to make it much better. It seems it happens a lot that microsoft often implements some concept, but then apple improves it or finds a better way to use it.

Actually, Microsoft already included multitouch capabilities in the Windows 7 OS. So if you have a multitouch display, it would work great with Windows 7.

Thats not the itouch. The IPod touch only has multi-touch technology. But the thing in the video is called Microsoft Surface.
