As part of the 2009 Flint Hills International Childrens Festival at the Ordway in Saint Paul, Minnesota, environmental sound artist/composer Philip Blackburn wired up a plant with a brainwave sensor. It sends the plant's electrical information to a MaxMSP MIDI patch (written by J. Anthony Allen) that then triggers some of the 2000+ pre-recorded vegetable/plant based samples. You can hear how your actions affect the plant's internal response. Plants are sensitive to their surroundings (light, water, heat, etc.) so this is a measure of that, like an organic Theremin. It's freaky what they "know". Details: http://oddsandendsorchestra.blogspot.com/ or http://www.philipblackburn.com/
Plants also respond to our thoughts...be interesting to just think towards the plant and see what happens.....if you haven't already that is.
