Just want to say, "Thanks." Many cooking show offerings are deteriorating into "entertainment" instead of instruction, & technique, so I do appreciate your videos and others that really are helpful. After getting a pasta attachment for my KA I gave my hand crank to my son because when I remodeled kitchen the clamp was too small for my new counter-tops. I saw your monster clamp & thought "brillant!"

However, I don't regret giving the machine to him, because "Hey, another convert!"

there was a dude who cooks for mr.chow is new york and he slams the pasta noodles on the counter to get the gluten going. i tried it when i made my pasta and it really makes the noodles much better.
