Why does it speak Cantonese over Mandarin? I thought Mandarin was the most popular form of Chinese spoken.
Or does it work like English and there are different dialects but it's all the same language?

20 years ago, if you visit China Town, Cantonese is more popular ... Putonghua is an official language in mainland China and of course more Chinese is speaking. Hong Kong is bilingual with 3 dialects.

it's so funny to hear a grey speak in Cantonese. and this bird is not just repeating, she's making some sense. Why did you trim her feathers so short, though?

As you are living in USA, your bird flies out the window, you can get it back from your garden or backyard. Hong Kong is another world, imagine you are living at 30-storey building. Once your bird escaping through the window, you wont get it back. Trimming feather is not uncommon practice in HK and it is also recommended by other parrot owners and bird shops. My grey cannot fly high but she still can manage to land on ground safety with her feathers.
