This video shows you how to enable third-party applications on your iPhone and iPod touch. On the iPod touch, it will also allow you to install iPhone applications later on.

SSH, which you will need later comes pre-installed with an easy on-off switch. Unlike jailbreakme.com, most applications installed from Installer.app will work without the installation of the BSD Subsystem.
