The Pikachu that returns to you should be at the exact same level, with the exact same personality value (including gender and nature), IV's, and even effort points as the Pikachu you left behind (and hence the one you started with in the first place). In other words, you get the exact same Pikachu back. This is because the game dedicates an entire memory slot just for Pikachu's data, a la Yellow after the Jigglypuff in the Pewter City Pokemon Center Sings Pikachu to sleep but before it awakens.
