The Cajun Wife smokes garfish from an old family recipe for brine. After it is smoked she smothers it in a tomato gravy. Classic Cajun music from Dewey Balfa, Marc Savoy and D.L. We always smoked them in the skin after cleaning, we would crack them open like a coconut.....the finest eatin you ever had. Beautiful white meat!!! =) Thanks for a new recipe, it looks delicious, I cant wait to try it!!!!! =)

hi, no problem. We havent been out in a while, but if you give me some type of contact info, I will get in touch with you the day before we go and be sure and get them to you somehow. I am in Hammond, LA so depending on where you are we could ship them on ice or you could pick them up. We usually take around 15-25 per night. Average 2-3 ft long. Mostly spotted gar, some alligator gar. We may try to go in the next few weeks.
