The Hawkesbury Diploma in Dairy Technology, c. 1956/1957

This is a promotional film produced by the Milk Board of NSW to highlight the processes and skills required by the dairy industry and the career options available to Dairy Diploma graduates.

Hawkesbury Agricultural College developed students academic and practical skills with students taught to care for the dairy herd, processing of milk into a wide variety of dairy products as well as supplementary skills such as welding, and how to operate and maintain boilers. Students were also encouraged to participate in debating competitions, sporting teams and to take on leadership roles with the Students Representative Council. This film shows a student and parent being interviewed by Principal Richardson to plan the students study and career path, visits to commercial dairy factories to broaden students' experiences and a Diploma Day presentation of Hawkesbury Diploma in Dairy Technology.

This film includes footage of the Fairy Circle, the Main Administration Block and aerial views of the College. The student residences, Memorial Hall and library are also filmed. The sporting pursuits of the students are illustrated with footage of a cricket match, tennis, diving and swimming, a Rugby Union match, high jump and hurdling. This film captures all aspects of an operational dairy factory demonstrating the processes involved in handling fresh milk, the production of cream, ice cream and butter, and the manufacturing of powdered or sweetened condensed milk. The production and manufacture of cheese is revealed including the operation of the cheese vat and the curing rooms. The College Dairy Factory produced cheddar, gruyere, blue vein, and edam cheeses. Academic lessons are also shown including lectures in refrigeration and steam raising plants, laboratory lessons and business principles and bookkeeping.
