I've tried to find medical documentation showing the correlation to oral and esophageal cancers from the use of Yerba Mate. From what I can find (which isn't much) it seems that any carcinogen effects are most probably caused by any wood smoke used in the drying of the leaves and stems and not the yerba mate itself.
Now If high water temps bring that carcinogen out or not I do not know, but I thought it might be something interesting to check out.
