  • Okay, here are the mistakes:

    1). Mushrooms should be cut small, put into the blender, seasoned, then blended until very fine.

    2). NO OIL OR BUTTER IN THE MUSHROOM PAN

    3). Way too many ingredients in the mushrooms. It's just mushrooms, salt, and pepper. No onions or thyme or anything else.

    4). Your fillets were way too fatty.

    5). You're supposed to use puff pastry. That dough was thin and papery.

    6). Wellington should be prepared whole, then cut 1" thick after finished baking.

  • This is one of my favorite classic fine dining dishes. This is pretty much the classic style although some people make what is called the poor mans wellington, I will eat them both!
