Also known as my World Famous Ecliptic Omelet. In this video I detail how to cook yourself a tasty breakfast while multitasking. You can use a spray on cooking oil instead of Olive Oil or you could use Canola, Peanut, Safflower or Sunflower Seed Oil if you do not like the flavor of Olive Oil. You can use less oil than I use as long as the pan has a thin coating. I use a cast iron skillet which has been seasoned. In another video I will talk more about that skillet, how to prepare a new one and how to maintain one. Cast Iron is the best material for cooking anything that is fried or uses oil. Once seasoned cast iron is the original non stick pan and has no harmful teflon which as most people know is an environmental catastrophe and may effect you mental health. Contrary to common thoughts on the subject I feel oil is a necessary part of your daily intake. The more raw and vital the oil the better. I am speaking of vegetable oil that has no trans fats or preservatives. Canola, Olive, Peanut Safflower and Sunflower oils have good nutrients in them and consumed in moderate quantities will increase your health IMO. I also think that eggs and cheese are an excellent source of protein for ovo-lacto vegetarians. I prefer free range eggs. The nasty white mass produced eggs are not something I suggest eating on a regular basis. I eat about 3 eggs per day. That's about one thousand eggs per year. I have been doing that for well over 25 years and my cholesterol is ridiculously low, I have excellent health and blood pressure. The idea that eating eggs, oil, potatoes is unhealthy is wrong IMO. I am living proof that you can eat them every day for decades and have excellent health. A big meal like this is enough to keep me fueled up for 2/3rds of a day. I don't usually eat this for breakfast, but for a brunch or early lunch. For breakfast I prefer oatmeal. Oatmeal does not keep me running for long though. After a few hours I can feel my energy decline...then it's time for taters and eggs. Store bought hashbrowns with nothing in them but potatoes are best for me. Ore Ida brand has tons of Dextrose and that makes me feel sluggish. I have other potato recipes for breakfast so stay tuned for variations on this theme of taters n eggs.

  • @MrBundyR I detest salt on my eggs. Must have it on the potatoes. Hot sauce is mandatory. I cannot eat an egg unless it is covered in hot sauce.

    I think I have to get a cast iron skillet. I only have teflon right now. I have had an enamel skillet once, but had to get rid of it.

  • @TheDruidAbides I must try that then. Have always used salt to lift the flavour of eggs but I can see a bit of chilli working just as well.

  • my fave breakfast is to make ham egg and cheese samages then take it and grill it like a grilled cheese sandwich and use pepper jack cheese and texas toast bread
