A great show has been on TV in the Northeast for almost 5000 episodes now and has a great name of, "Cooking with Class." Hosted by Chef Frank Terranova, he has been a good friend and mentor! Frank is also a senior instructor at Johnson and Wales University in Rhode Island. In this episode I put together half of a Yellowfin tuna steak and half of a Halibut steak. I grilled each in a small amount of Custom Gold, Fish broth (boullion) and some herbs. Then I put an invigorating fresh fruit salsa on top after grilling and served over Basmati rice. See more at www.mongielloassociates.com. This is a fun and rather healthy way to enjoy fish and is sometimes called Floribbean cuisine. If you would like to know more about eating healthy in general - I always recommend Doctor Dean Ornish's books as he is a wonderful friend of mine. His teachings gave me the inspiration to develop and create many recipes that are vegetarian based as well as other ideas!
