Chicken Divan (everyone LOVES this recipe except for one auntie that doesn't like curry)
serves 8 Bake: 25 minutes at 350 degrees
4 chicken breasts, deboned, skinned
6 C fresh broccoli, broken into pieces
2 (10 3/4-oz) cans cream of chicken soup 1 C real mayonnaise 2 t fresh lemon juice 1 t curry powder
1 C sharp cheddar cheese, shredded
2 T butter, melted 3/4 C bread crumbs
1. Steam chicken breasts for about 20 minutes or until the chicken is tender. (I cook them in my little George Foreman grill if I'm in a hurry.) Then cool and cut into bite sized pieces and set aside.
2. Steam broccoli for 4 minutes and drain. (Don't overcook, or it will be mushy.) Arrange broccoli in a greased 9x13 inch casserole dish. Arrange chicken pieces on top of broccoli.
3. Combine the next four ingredients in a medium bowl. Mix together with a wire whisk until the lumps are gone. Pour this mixture evenly over the chicken.
4. Sprinkle the cheddar cheese over the casserole. Top with a mixture of melted butter and bread crumbs. Bake at 350 degrees for 25 minutes or until the casserole is bubbly and light brown on the top. Serve over steamed rice or Chinese noodles.
