Cooking dried beans doesn't have to be boring--they can be quite beautiful! See how Chef Jody Adams of Rialto Restaurant makes a spectacular and healthy dish of beans.

Herbed beans
Jody Adams/Rialto

Serves 6

½ pound small dry beans (cannellini, navy, kidney, etc), cleaned of dirt and stones and rinsed
2 tablespoons extra virgin olive oil
2 ounces pancetta, cut into ¼ inch dice
1 cup onion cut into ¼ inch dice
½ cup celery, peeled and cut into ¼ inch dice
1 cup fennel, trimmed out tough outer leaves and cut into ¼ inch dice
2 tablespoons minced garlic
3 bay leaves
1 cup chopped no-salt added canned tomatoes
3 cups chicken fat-free, low-sodium chicken stock, fat-free, low-sodium vegetable stock
Squeeze of lemon juice
½ cup mixed chopped soft herbs including, basil, parsley, chives, mint and any other herbs you may have on hand
1/8 tsp Kosher salt and freshly ground black pepper

Cover the beans with water, and soak for 8 hours, or overnight. Drain.

Heat the olive oil with the pancetta in a large sauté pan over medium heat. Cook 4 minutes.

Add the onion, celery and fennel, season with salt and pepper and cook another 5 minutes or until tender.

Add the garlic and cook 1 minute.

Add bay leaves, tomatoes, beans & chicken stock to cover by 1 inch. Reduce the heat to low and simmer 45 minutes to an hour or until the beans are tender. If the beans are done but seem too soupy, increase the heat and boil to reduce the juices. Season with salt and pepper and remove from the heat. Stir in the lemon juice and the herbs.
