Ingenius of Chen, replacing fermented tofu sauce with processed cheese in that spinach/Crab dish. usually, fermented tofu is used for saltiness and a sauce.

I think Chen has this one. The challenger's items look great, but the Iron Chef seem to have featured spinach more in surprising ways. I think it'll depend on how well the challenger's dessert goes over in terms of taste, and whether or not the panel thinks the spinach was prominent enough in the salt-crust dish.
