in principle, you can, but in F1 you want to have the most power possible and putting the generator as a load on the engine would steal some power from the engine and converting energy types induces loss in energy (friction, heat, etc..)
With KERS, you're using the rotation of the rear wheels to charge up the battery (notice, ONLY while braking) and thus, actually slightly improving the braking ability of the car!

@trebor27rob Ok when you brake the movement energy (kinetic) of the brake pads create friction and heat. The turning of the axles is transferred into kinetic engery by an altinator. That was the thing next to enengine in the vid. And then the electric energy is converted into chemical engery as it flwos into the battery. Then the driver turns on the KERS and the process is reversed. It turns the altinator and because the alt turns the diff faster than the engine making 80 more hp = more speed

What I don't get is why not do it the other way around buy charger it while the diff is moving.
