Introduction: This You Tube video was created by Cora Abbiati and Anna Sobanski, an aunt and niece team who enjoy cooking together. We are from the United States of America. Our recipe is a simple one combining Korean cuisine with American culture -- resulting in a delicious taste. The Mandu ingredients are: 1 pound of fresh ground turkey, 1 cup of prepared turkey stuffing, 1 cup of corn, and ¾ cup of dried cranberries. Salt and pepper can be added to your taste. Additionally you will need a package of Mandu wrappers, a little vegetable oil for frying, and a small bowl of water for sealing the wrappers.
The Cranberry Glaze ingredients are: 1/3 cup of prepared cranberry sauce, 3 to 4 tablespoons of water, 1 ½ teaspoons of lemon juice and a pinch of fresh lemon zest.
Recipe details: Mix all the Mandu ingredients together in a bowl. When well mixed, place a teaspoon of the turkey mixture into the center of a Mandu wrapper and then run your wet fingers around the circumference of the wrapper before folding it into a half moon shape. Press the edges to seal. Finally, pinch pleat or crimp the edges of the wrapper to make them in the traditional Mandu shape. If you are going to freeze the Mandu, place them on a cookie sheet pan lined with plastic wrap and cover them with plastic wrap. Put them into the freezer. When frozen, they can be removed and put into plastic bags for later use. If you are cooking them right away, heat some oil in the bottom of a frying pan. Once the oil is hot, place the Mandu into the pan. Turn to brown both sides evenly. Check to be sure the meat is thoroughly cooked.
While the Mandu is cooking you can prepare the glaze in a small sauce pan. Mix the ingredients together and heat. Stir the glaze and add more water as needed, until it is a consistency that can be drizzled over the Mandu.
Place the cooked Mandu on a serving dish and drizzle with the Cranberry Glaze. Enjoy!
Critique: As the American Thanksgiving is approaching, we were trying to infuse a bit of our culture into a traditional Korean dish. Thanksgiving is a great time of the year for family gatherings and food is usually the center of each celebration. Traditional Thanksgiving foods have wonderful smells and are comforting to many homes in America. The crunchiness of the outside in contrast with the softness of the filling, along with the flavors of Thanksgiving, brings warm feelings of family and friends with each bite!
As we created this recipe, we realized that it is very adaptable to different ingredients -- you can substitute many of the other Thanksgiving foods and it still makes for delicious dish, side dish, appetizer, or even dessert! We also liked that Mandu is not too difficult to prepare, given we can purchase the wrappers and use prepared stuffing if need be -- so anyone from a beginner cook to a more advanced one, can make our recipe. We can imagine this same dish made with sweet potatoes, butternut squash, rice stuffing, and even a pumpkin pie filling for a dessert!
Regardless of the protein, it is wise to cook all meat thoroughly to avoid illness from undercooked meat. Thanks for watching our video!
