the thing you have to watch out for is people who already know all this and they hope you know it as well. so if i make it look like i got a strong hand by looking at my chips and away from the board but its a bluff and then you fold. or if i shrug my shoulders/sigh that makes it look like i got a monster as well.

That's why these tells are good for people that don't know about them. They'll have no idea what they're telegraphing, and probably won't be able to fake anything. However, for someone like you, I'd have to pay extra careful attention to whether the tells your giving off are natural or acted. This is what Caro's book talked about that I read. A major part of reading people was determining whether the tells were natural or fake.
